Potassium metabisulphite, also known as potassium pyrosulfite, is a white crystalline powder with a pungent odour. It is stable in dry air, but in moist air, it will release sulfur dioxide. Potassium metabisulphite is easily soluble in water, slightly soluble in alcohol, but insoluble in diethyl ether.
